Guest Speaker Addresses Food Sustainability
Fedele Bauccio, co-founder of Bon Appétit Management Company, which provides sustainable food service to corporations, universities and museums in 32 states, is coming to UC Merced to talk about environmentally sound food practices.
His presentation is free and open to everyone on campus, and refreshments will be served.
Bon Appétit is considered a pioneer in sustainable sourcing policies, and under Bauccio’s leadership, the company has developed programs addressing local purchasing, the overuse of antibiotics, sustainable seafood, the food and climate change connection, humanely raised meat and eggs and farmworker rights.
Bauccio is the second in a group of food-themed speakers at UC Merced this year as part of the Sustainability Speaker Series. The theme ties in with the UC’s Global Food Initiative and has direct relation to UC Merced, which strives to implement sustainability in all of its operations and practices.
The lecture is sponsored by UC Merced Sustainability, Dining Services, the UC Merced branch of the Blum Center and the Karen Merritt Writing Program.
